This granola recipe is one you won’t want to miss. It’s naturally sweetened with honey – and it’s great to make with our blueberry, buckwheat and liquid honey, just pick your favourite. Make a big batch to eat as a snack, or for breakfast – or throw it in the freezer to pull out on a busy day!
Ingredients
4 cups | Old Fashioned Oats |
1 cup | pecans (chopped or whole) |
1 cup | sliced almonds |
1/2 cup | dried coconut flakes |
1 cup | pumpkin seeds or sunflower seeds |
1/2 cup | honey (liquid, blueberry or buckwheat) |
1/2 cup | butter or coconut oil |
1 1/2 tsp | cinnamon |
1 tsp | vanilla |
Instructions
- Preheat the oven to 250 degrees F.
- Mix oats, nuts, seeds and cinnamon together in a large bowl.
- Put honey and butter or coconut oil in a pot and heat until the butter/oil has melted. Stir the mixture while it is heating to mix the honey with the butter/oil.
- Remove from the heat and add the vanilla to the honey mixture and stir. Pour this over the oats and nuts and stir to combine.
- Pour everything onto a large cookie sheet lined with parchment paper. bake for about 1 hour and 10 min.
- Remove from the oven and let the granola cool on the pan. It will crisp up as it cools. Stir the mixture to make small chunks, or break it apart with your hands.
- We store it in the freezer to keep it fresh. It will last like this for several months.
