Grilled Chicken and Pineapple Skewers

These chicken and pineapple skewers are the perfect addition to your next summer bbq. The marinade is sweetened with our pure Ontario Honey.

Fire up the bbq for these pineapple and chicken skewers. This recipe can be easily doubled for a larger group.

Ingredients

8 boneless, chicken thighs, cut in half legthwise (to create two long strips)
1/2 cup soy sauce or coconut aminos
1 clove garlic, minced
1/3 cup honey
1 tsp sesame oil
1/2 fresh pineapple cut into 1 inch cubes
1 bell pepper, (any colour), cut into 1 inch pieces
1 large onion, cut into chunks

Instructions

  1. Mix the soy sauce, garlic, honey and sesame oil together. Pour into a bag or dish and add the cut up pieces of chicken. Make sure the chicken is coated with the sauce and marinate in the fridge for two hours or overnight.
  2. Slide chicken onto the skewers and alternate with pienapple, onion and peppers until the skewer is full.
  3. Grill on medium heat, turning skewers occasionally, and brush with the remaining marinade while the meat is cooking.
  4. Drizzle with honey before serving, if desired.
